Fresh Mango Salsa Recipe

Juicy mangoes add sweetness to this beautiful, quick and healthy mango salsa. Flecked with red onions, jalapeno and cilantro, it’s mouthwatering with seafood dishes or with your favorite healthy chips or veggies. A proven favorite with young and old alike!

Fresh Mango Salsa

Ingredients

  • 2 ripe organic mangoes (diced)
  • 1 small organic red onion (peeled & diced)
  • 1 medium avocado (diced) (optional)
  • 1-2 jalapenos (seeded & diced)
  • 1/2 cup chopped fresh cilantro (loosely packed)
  • 1/4 tsp red pepper flakes (optional)
  • freshly ground black pepper
  • Himalayan salt (to taste)
  • juice of one organic lime

Directions

Thoroughly wash all produce. Toss all ingredients together.

Serve fresh with homemade organic chips, fresh veggies or as a wonderful topper for fresh grilled salmon.

For storage, refrigerate in a sealed glass container for up to 3 days.

Peeling Mangoes: The skin of a mango is tough and not meant to be eaten. Peeling and pitting the fruit is often a challenge. For best results, cut the mango in half, working around the pit. Place a half on the cutting board flesh-side up and score 1/4-inch squares in the flesh. Do no cut through the peel. Turn the half inside out and cut the fruit away from the skin with your knife.

Fresh Homemade Mango Salsa Pizza: If you have a healthy pizza crust recipe, use Fresh Homemade Mango Salsa as a topping all by itself. Roll out dough and press into the baking pan. Place in the oven and cook about 15 minutes or according to your recipe. Take the pizza crust out of the oven and spread with Fresh Homemade Mango Salsa. Place the pizza back into the oven and bake until the toppings are hot and the crust is browned, about 5 to 10 minutes. Cut the pizza into even slices and serve immediately. Yum!!
